Bomba-Reis\/Paella Reis<\/li>\n<li>150g Seeteufel oder Seehecht (ohne Gr\u00e4ten) \u2013 (frisch oder TK)<\/li>\n<li>150g Tintenfischringe \u2013 (Frisch oder TK)<\/li>\n<li>4 Stk. gro\u00dfe Garnelen (Langostinos, ca. 20-30 St\u00fcck\/kg) \u2013 (frisch oder TK)<\/li>\n<li>1\/4kg Miesmuscheln (roh)<\/li>\n<li>ca. 70g Piquillo Paprika<\/li>\n<li>\u00bd rote Paprika (frisch)<\/li>\n<li>100g gr\u00fcne Erbsen (frisch oder TK)<\/li>\n<li>100g reife Tomaten in St\u00fccken od. passierte Tomaten natur<\/li>\n<li>\u00bc gro\u00dfe Zwiebel<\/li>\n<li>1 Knoblauchzehen<\/li>\n<li>0,4g Safran-F\u00e4den \u201eSalt &amp; More\u201c<\/li>\n<li>Nat\u00fcrliches Meersalz \u2013 Fein \u201eSalt &amp; More\u201c<\/li>\n<li>Fischfond: 8 Liter f\u00fcr den Fond (1,2 Lit. zum Kochen, davon 0,3Lit. als Reserve)<\/li>\n<li>Spanisches Oliven\u00f6l Extra Nativ<\/li>\n<\/ul>\n<p>Fisch, Tintenfische, Garnelen und Erbsen kann man auch tiefgefroren kaufen und vor dem Kochen auftauen lassen.<\/p>\n<p>Diese Zutaten kann man nach Vorliebe und Geschmack auch \u00e4ndern, z. Tomaten sch\u00e4len, klein zerhacken oder einfach mit einer Reibe grob raspeln. (Nur wenn frische Tomaten verwendet werden.)<\/li>\n<li>Miesmuscheln waschen und in einem breiten Topf mit wenig Wasser kurz kochen, bis sich die Muscheln ge\u00f6ffnet haben. Aus dem Topf nehmen, die nicht ge\u00f6ffneten Muschel weggeben, von den anderen die obere Schale abnehmen und auf einen Teller stellen. Das \u00fcbrige Wasser abseihen und zusammen mit dem Fischfond zum Kochen bringen (gesamt 0,9 Lit.).<\/li>\n<li>Safran-F\u00e4den hineingeben und kurz mitkochen lassen.<\/li>\n<li>Zwiebel, frische Paprika und ca. 50g Piquillo Paprika klein zerhacken.<\/li>\n<li>In einem M\u00f6rser (oder einer Knoblauchpresse) Knoblauch mit Petersilie und Salz gut zerdr\u00fccken.<\/li>\n<\/ol>\n<h3>PAELLA KOCHEN<\/h3>\n<ol>\n<li>In der Paellapfanne reichlich Oliven\u00f6l \u2013 der Boden soll gut bedeckt sein \u2013 erhitzen, erst Zwiebel und frische Paprika and\u00fcnsten und dann das fertige Knoblauchgemisch und Tomate dazugeben. Auf mittlere Hitze anbraten.<\/li>\n<li>Anschlie\u00dfend \u2013 bei h\u00f6herer Hitze und unter st\u00e4ndigem Umr\u00fchren \u2013 den Fisch, die Tintenfischringe\/-st\u00fccke und die Riesengarnelen dazugeben und mitbraten (ca. 5 bis 10 Min.).<\/li>\n<li>Nach 5 Min. die Riesengarnelen auf einen Teller raus geben.<\/li>\n<li>Kurz danach Reis dazugeben und ca. 5 Min. lang einr\u00fchren.<\/li>\n<li>Mit dem kochenden Fischfond mit Safran (0,9 Lit.) aufgie\u00dfen, salzen und ca. 20 Min. kochen lassen.<\/li>\n<\/ol>\n<h3>Kochanleitung f\u00fcr die 20 Min. Kochzeit<\/h3>\n<ul>\n<li>Die ersten 5 Min. mit starker Hitze kochen und danach die Hitzestufe so reduzieren, dass der Reis gerade noch k\u00f6chelt.<\/li>\n<li>Nach ca. 15 Min. die Riesengarnelen dazugeben.<\/li>\n<li>Gleichzeitig (falls notwendig) von den \u00fcbrigen 0,3 Lit. gekochten Fischfonds nachgie\u00dfen.<\/li>\n<li>Fertig kochen lassen, Herd ausschalten und mit einem sauberen Geschirrtuch die Paella abdecken und 5 Min. ziehen lassen.<\/li>\n<\/ul>\n<p>Gutes Gelingen!!<\/p>\n\t<\/div>\n<\/div>\n\n\n\n\n\t\t\t<\/div> \n\t\t<\/div>\n\t<\/div> \n<\/div><\/div>\n","protected":false},"excerpt":{"rendered":"Zutaten F\u00fcr etwa 4-5 Personen als Hauptspeise oder f\u00fcr ca. 10 Personen als Vorspeise.
