Pickled salt lemons

Preserved lemons are used as a condiment to add a touch of distinction to various types of dishes. In their countries of origin (North Africa), they are used, for example, to enhance salads, couscous or tajine dishes. However, in European countries, its main use is with meat and fish.

The extreme acidity is attenuated through the pickling process, resulting in a pleasant, fresh lemon aroma. The salt makes the usually hard peel of the lemons soft and edible.
